This is a shorter episode where I share something that occurs to me while out on a walk. We focus so much on getting things done around here that sometimes it is easy to forget to make time for your mind to wander and a walk is a great way to do that. Today, I have some thoughts on the great tradeoff of control for other things such as reach, security, money and more. There is a constant pressure between these things and many folks do not assess their choices with this knowledge in hand.

Today, I have a pretty short episode about family, making time for them, and why it matters. Why short? Because today, I am coming to you from California while visiting my family -- and nieces -- who I have not seen in over a year. And what a visit it has been. I will be here through Tuesday and fly home on Wednesday, which means that the podcast for Wednesday will be a replay because I have realized that flying across the country, and also recording a podcast is not going to work this week. But don’t worry. We will be back to normal on Friday...and the Holler Hat content post will go out as planned as it is the last one before Thursday’s drawing for a free membership!

Today is a thought of the walk day and I take on what may be to some a sensitive issue: Privilege. My take may not be a new one, but this issue seems to get so bogged down in vocabulary, debate and this intellectual analysis and that intellectual analysis. As I was taking a hike through the forest, I realized that with all the academia, spin, politics and hysteria around the concept of privilege, it is not as complicated as we try to make it.

Content Planning, Energy Use and More

What is a content plan and why would you need one? Promoting an idea, project or product takes communication. If people don’t hear about what you are up to, they won’t “buy in.” And by “Buy in” I mean not only purchase something, but also things like download your podcast, read your blog post, spread the word about you, etc. If they do not know you or your product or service exist, things stagnate.

So, after you have set your marketing goals, know who you want to target and have an idea about the big picture message of a project, know where these folks are and what they are interested in, you need a content plan. This is even more important if the product you sell is CONTENT.

  • What is a content plan?
  • What do you need to make one?
  • Then what do you do next?

It’s the first episode of 2019 and we had a wonderful week off. Today, I will talk through processing deer as well as share recipes along the way that we use.

My independence fund got a huge boost last week in the form of venison. 40 pounds to be more specific. Processing it cost me $38 in supplies, of which I only used ¼, so that works out to $.23 cents a pound spent for $120 in meat (conservatively). Add to that the 6-8 quarts of deer stock I will be canning and it was a pretty big score!

Today, I want to take on another country kitchen topic but from a bit of a different angle over last week: Modern Cooking in the country kitchen with a sous vide machine. Yup, this year, I got my hands on a sous vide machine and started experimenting with it. At first I was a bit skeptical about if it would really make a difference, but I also knew of other uses for it outside of cooking and thought it would be handy to have around. Then I got the thing and ended up LOVING it - like as in loving it more than my crockpot. So today, we will talk about what sous vide is, why I have started using it here at the Holler Homestead and even talk through some recipes.

  1. It really shines with meat 
  2. Large numbers of eggs work well
  3. Pre-spice your meats then freeze….
  4. Defrost with it, or go from frozen to cooked without the defrost phase
  5. Awesome when you need to time things just right

Cons

  • Sometimes you just want a slow cooked stew
  • Haven’t found many vegetable sides I like cooked this way
  • It is one more kitchen gadget

Questions:

  • Does it make tough meat more tender?
  • What if you do not have a vacuum sealer?
  • How do you boil eggs with it?
  • What if you cook something too long?
